- Encapsulation and targeted delivery of bioactive compounds, such as probiotics and phenolics, through the gastrointestinal tract.
- Development of personalized nutrition utilizing 3D printing technology.
- Vegan meat production exploiting alternative protein sources via high moisture extrusion.
- Development and characterization of active packaging films.
